It's Memorial Day, and I'm spending it solo. It's my own choice really. The superflux of grad homework, plus my raging hormones, caused me to want to take a night in.
In search of a simple meal for one, I stumbled upon this recipe for Tortilla and Avocado Soup from the Flat Belly Diet.
All I can say is holy guacamole! This soup (pictured above with my sugarfree blueberry sangria concoction) was so tasty and filling, and at a measly 282 calories a serving, I might still have room for a light dessert!
